    HTW # 116: Increasing the number and types of vegetables we eat every day is great for our bodies. If you choose to eat more vegetables, make sure they are not breaded or deep fried or else it cancels out the benefit of the vegetable. Foods fried in some oils such as coconut oil, palm kernel oil, and hard margarine are unhealthy and should be avoided whenever possible because the way they are processed  makes them high in calories and fat. One option is to lightly sauté (healthopedia term) vegetables in a healthy oil such as olive oil or sunflower oil.
