Bran Muffins

Bran Muffins 
  Bran Muffins

225g Wholemeal Plain Flour

200g Brown Sugar

1 Tbsp Baking Powder

1 Tsp Cinnamon

1 Tsp Ground Ginger

40g Wheat Germ

40 g Porridge Oats

Pinch Salt

250 ml Milk

200 ml Plain Yoghurt

2 Eggs (beaten)

175 ml Vegetable Oil

Cup Blueberries (can substitute for pitted cherries, cranberries, raspberries or apricot and coconut)

Preheat oven to 175 ° C,

Line 12 Cup Muffin Tin with Patty Pans. In a bowl, combine the dry ingredients. In a separate bowl, combine the yoghurt, milk eggs and oil and whisk together. Add wet mix to the dry ingredients and loosely fold together until wet. Add the fruit and then spoon evenly to patty pans. Bake for 20 minutes or until a toothpick pulls out clean. Remove from oven and let cool in tray for 5 min before removing muffins to cool on a rack. Store in an airtight container for up to a few days.

This sounds incredibly tasty. Where do you find some of these ingredients and what else can you use them for? I bought flax seed once and had a whole lot of it left because I didn't know what else to do with them. What else can I use "wheat germ" for? And is "wholemeal plain flour" the same as unbleached wheat flour?? And porridge oats...would that be farina?

Not sure what farina is, I think you call it oatmeal. Wheat germ and the flax can be added to really anything with flour in it; it will add more texture to wahtever you make. Spot on with the flour.
Be a little carefuladding too muckh fibre into your diet as it will cause bloat and discomfort. If you are not used to it, reduce the flax and wheatgerm and add more flour. I think the thing with muffins is to experiment and create even better muffins. If they are healthy even better!

Do you have any more healthy recipes to share with us? I'll have to try out some of these ingredients- I've definitely never used flax seed before.

You can get these ingredients at any food store?

Can you add berries or something else to bran muffins to make them a little more interesting? Will that ruin the recipe?
