Try this recipe for delicious Chicken Taco Pizza

Ingredients:

1 frozen whole wheat pizza crust, thawed

1/2 cup tomatilla salsa, plus more for serving

1/4 lb. part-skim shredded mozzarella cheese

1 cup no-salt-added black beans, rinsed and drained

1 cup frozen yellow corn, thawed (you can use fresh corn when it's in season this summer!)

1 boneless, skinless, cooked chicken breast (you can use canned chicken for this too)

1/2 cup chopped cilantro

Instructions:

Preheat oven to 425 degree F. Arrange crust on a large baking sheet. Spread salsa over crust then sprinkle with half of the cheese. Top with beans, corn, chicken, and remaining cheese. Bake until crust is crisp and cheese is bubbly (about 25 minutes). Sprinkle with cilantro, cut into 8 pieces and serve with more salsa on the side.

Serves 4 people. YUM!

I have a recipe JUST like this for "Mexican Lasagna"! A mix of Italian and Mexican - it's sooooo good!

1 (15 oz) can pinto or black beans, drained and rinsed

1 (14 oz) can diced and crushed tomatoes (I like to get the ones with the Chile peppers/jalapeno peppers in it for spice)

1 (4 oz) can chopped green chiles

2 cups of frozen corn - thawed

2 green onions - minced (I use yellow onions when I can't find green onions)

1/2 tsp cumin

1/2 tsp oregano - dried

8 low fat flour tortillas (corn tortillas work just as well)

1 1/2 cups grated, low fat or light Monterey Jack Cheese (I also use low fat/light Mexican blend Cheese)

Reduced fat sour cream or low fat plain yogurt for garnish - optional

1. Preheat oven to 400 degrees. In a large mixing bowl, combine the first 7 ingredients and mix.

2. Spray 2 qt pan with non-stick cooking spray (I use a glass pyrex dish usually). Line dish with 3-4 tortillas (overlap if necessary)

3. Spread half bean mixture in a layer over tortilla and sprinkle with 1/2 cheese. REPEAT.

4. Bake 12-15 minutes or until hot and bubbly

5. Let stand 1-2 minutes

6. Cut in squares and serve.

7. Top with a dollop of low-fat sour cream or yogurt

Serves 8!

My boyfriend also likes to add grilled chicken breast which we make on our George Foreman Grill for some meat.. or some pan-fried and browned red meat.
