Flag as inappropriateMade a delicious eggplant dish yesterday. Was wondering what to do with all of the eggplant I received from last week's CSA. Here is what I came up with.
Ingredients:
2 small eggplants
1 cup of cooked brown rice
2 shaved carrots
1/2 onion
2 crushed garlic cloves
1 tablespoon nutritional yeast
Braggs seasoning to taste
Cut the eggplant lengthwise in 1/3" strips
lay the slices of eggplant in a cooking dish or on a sheet
brush both sides with olive oil
bake at 425 for 10 minutes
Turn over and bake for another 15 minutes
While the eggplant is roasting add 2 tablespoons of canola or olive oil to a pan and saute onion, garlic, carrot.
Season mixture with nutritional yeast and Braggs
Mix in the brown rice when the onions and carrots are soft but not frying
spoon the mixture on top of the eggplant strips
wait until the eggplant softens so you can roll the rice in the eggplant strip/seam down and bake for another 10 min.
Or you can eat it as is without rolling and baking! Delicious!
